In my family November is birthday month so cake baking is part of the plan. I saw this cookbook cover here and started thinking about Thanksgiving desserts. This year I want to make a pumpkin cheesecake or something unusual. But the classic birthday cake I make every year is this delicious Genoise Cake. This year I spread raspberry jam from Trader Joes in the center layer and made a mocha icing from our Jacques Torres chocolate mix. The icing has small chunks of chocolate mixed throughout.
It looks as good as the cover of the one above in a homemade kind of way and the taste... fabulous.
