I like eggs and eat them often in many forms; hardboiled, deviled, scrambled, fried. We have a tradition of having cream cheese and asparagus omelets in the spring. Cooking Fun has an entire egg section devoted to the fine art of simple egg dishes. I think it is one of the more important foods for kids to learn about when they first begin to cook in the kitchen. I prefer organic, local, free range eggs. Try both local and store-bought eggs and compare flavors.
One of my favorite egg dishes is quiche. I follow Julia Child's recipe in The Art of French Cooking and every time it turns out well. However, this time I overloaded my pie dish with leeks and spinach and had leftover batter. Easy enough to toss but it seemed wasteful so I poured the batter into a small glass pyrex style dish and baked it. It's a great alternative to pie crust if you want to cut out wheat or to just taste the freshness of the recipe. Kid size perfect.
